Is the professor supposed to be doing a course to teach the mechanical use of computers for commercial art, or is he supposed to be tickling his students' sense of adventure, so they are able to be a bit more useful to employers than mere mouse-monkeys?

In any school setting, drawing out and developing a student's mind should be the ultimate target. In an Art school setting, the appreciation of colour and form together with the vital stimulation of imagination and curiosity is far far more important than whether a particular computer program is Free or commercial. In fact, the quite large financial savings made by the use of free software can be used to provide experiences using wider range of art media.

For the ultimate in productivity, learning to produce programs and scripts is by far the most important skill to have. Without any doubt whatsoever Linux offers by far the richest environment in which to do this.

Apparently the professor found art tools that his students enjoyed.
