Apple OS X uses BSD Unix but not X11

I hadn't thought about this until now, but I believe that while you can use X11 in OS X, the default video system is not X but ... something else.

Can anybody enlighten me on what/why/how?

IIRC the display system in OS X is called "Quartz". It's roughly the illegitimate second cousin once removed of NextStep and QuickDraw.
