Hmmm. Unless you control the data path from end to end, your transmissions are still subject to interception. As far as France not snooping,

Keep in mind that for a very long time, if not now, encryption was illegal in France

Pretty much every Western country does that. So do a lot of other countries, but thanks to a lack of freedom they can keep their press from reporting on it.

Yep, as this slide illustrates, no server overseas will help you avoid the NSA's prying eyes.
