Best project: 7-Zip. An obscure, academic compression stuff? I like that :) [anyway, LZMA is still very "traditional", my latest craze is PAQ8, also open source and even open research ;)]

As for others, in my previous life I used TortoiseCVS and it was really cool. I wonder how much effort would it be to make a similar plugin for Konqueror...

There's a set of python-nautilus extensions that, together with meld the diff viewer, do pretty much what Tortoise does on Windows. Pretty cool.

The thing is, I don't use graphical file managers much anymore... Bash rules ;) I was just wondering...
