Why is this a problem?

Why would you want to change your default apps? Unity and Gnome3 are all about not having any choice, and simply using your computer the way other people tell you to. If you're going to sign up for that, by using Ubuntu 11.10, then you need to accept that you're incompetent at picking default apps, and need to let the Ubuntu developers make those choices for you.

If you don't like that, then you shouldn't be using Ubuntu and Unity.
